Fresh fruit muffinsthat can be eaten any time of day. Makes a great lunchtime/afterschool snack! Try peaches, blueberries, strawberries, or even chocolate chips!

SERVES 12 , 12 muffins (change servings and units)

    In a large bowl, whisk together flour, sugar, baking powder, and salt.

    Add milk, egg, and applesauce; mix until ingredients are moistened, do not overbeat.
  3. 3
    Stir in fresh fruit. Spoon batter into twelve greased muffin cups.
  4. 4
    Bake at 400 degrees F (205 degrees C) for about 20 to 25 minutes, or until tops spring back when lightly touched. Serve warm.
