"wicked" Chocolate Chip Muffins

I found this recipe in and 'old school" muffin mania cookbook, tried it this evening with the kids and it was a huge hit. Really nice texture, light & fluffy. A+ in my book.

SERVES 8 -12 , 12 muffins (change servings and units)

Ingredients

Directions

    Pre-heat oven to 375 degrees. Grease and flour your muffin tray.
  2. 2
    Mix togeher the dry ingrediants & the chocolate chips in a medium bowl.
  3. 3
    Mix togeher, butter, egg & milk, and add to dry mixture.
  4. 4
    Do not over mix, 30 strokes should do it.
  5. 5
    Fill muffin tins 3/4 full and bake for 20 minutes.
  6. 6
    Enjoy!

I thought the flavour was good. I used semi-sweet chocolate chips & think they'd be much better with milk chocolate chips. I think the miniature size chips would be best. I also made 8 whopper-size muffins instead of a dozen. I found they became very dense after the first 24 hours-not fluffy anymore; that's why only the 3 stars.

    The only change I made was to use vegetable oil instead of butter. They were so good and light texture. Thanks Made for I recommend tag game.

    Fabulous muffin recipe! Very light texture - I thought they'd fall apart because they are so light but they don't! I received 15 muffins (using silicone muffin cups). Went to a meeting for an hour and came home to only 7 muffins (4 kids at 2 muffins each)! Before the night was over I was down to 5!! Big hit with the whole family! Tagged in Zaar Cookbook Tag Game May 2008.
