Welsh Rabbit (Rarebit) - Sort of Toasted Cheese

Nothing is more delicious that a well-made Welsh Rabbit, or 'rarebit'. It is easy to make but you do need to keep your eye on it! Have the toast made, and keep it warm, before you start cooking the cheese - which is best coarsely grated because it melts easily. From 'The Country Kitchen - Cheese And Biscuits' - Jean Hatfield.

SERVES 4 (change servings and units)

    Melt the butter or margarine in the top of a double boiler over boiling water. Add the milk or beer; when this is warm, add the grated cheese.
  2. 2
    With a fork, stir lightly but constantly until the cheese is melted. Season with Worcestershire sauce, mustard, salt and cayenne.

    Remove the saucepan from the heat, and stir in the lightly beaten egg, which will cook in a few seconds.
  4. 4
    Pour the mixture over the hot toast.
  5. 5
    Sprinkle with a little paprika if liked, and serve immediately.

I adore welsh rarebit and this is a fabulous version of it. Made for a great lunch a couple of weeks ago.

    I scaled the sauce down for 2 and served it over toasted bread and cooked turkey bacon for breakfast. Delicious. I also did this in the microwave with success, which made breakfast quick and easy. A nice change of pace. Thank you for posting.

    Aaah...yum! I love welsh rarebit (and all of the various ways to make it!!).This method was quick,easy and did I already mention delicious!! I used beer (not a rarebit without it really!) and added a dash of tabasco to the mix too. A wonderful lunch snack or supper dish without much effort being exerted. Thanks Karen Elizabeth.

    I also downsized this recipe for 2. And it was ....how you say!!!!Fantastic! Although I did cheat and made most of the recipe in the microwave on low.... and yes it worked! It worked well also. I used the beer option ( although had a small bottle left over as DH doesnt drink much) ahhh well it was worth it!!!!! I served with roasted tomatoes on toast and this made for a very rich and filling meal! Although I did not use the paprika option but this was so easy and quick to prepare (especially using the microwave.) First time trier's to Rarebit here, and DH an I both loved it. Thanks Karen.....wont let this recipe go am saving this one!
