Great egg salad

SERVES 2 , 2 sandwiches (change servings and units)

    In a bowl, combine egg whites and yolks, mayonnaise, salt, pepper, parsley, mustard and onion.

    Divide salad between 2 slices of bread, top each with two lettuce leaves and cover each with second slice of bread.

WOW! This is an amazing comfort food! It was great...but I used only one egg...it was very filling for me... To make it even more low-fat. I used half the serving of mayyonaise and substituted the other half with plain, white yogurt. It was great! Thank you for posting this!
