This refreshing drink is served by roadside vendors all over Mexico. Not too much fruit, not too much sugar, just a beautiful way to quench your thirst on a summer day. From 'EatingWell.com' and posted for ZWT5. NOTE: Prep time DOES NOT include 4 hour chill time.

SERVES 10 , 10 1 cup servings (change servings and units)

Ingredients

    Combine half the watermelon, half the water and half the sugar in a blender; puree.
  2. 2
    Pour through a coarse strainer into a large container.
  3. 3
    Repeat with the remaining watermelon, water and sugar.
  4. 4
    Stir in lime juice.
  5. 5
    Refrigerate until well chilled, about 4 hours.

    To serve, stir in club soda (or seltzer) and garnish with lime.

    MAKE AHEAD TIP: Prepare through Step 1, cover and refrigerate for up to 2 days.

I made this over the weekend which was particularly hot. It was VERY refreshing, and perfectly sweet & tart from the lime. I acidentally purchased a yellow watermelon- I didn't know such a thing existed, but the taste was the same as a regular watermelon and the drink came out great. Thanks so much for posting.

    My family really enjoyed this. And as you may be able to tell from the photo - they enjoyed the pulp and requested that I not strain it. Since it is May when we're trying this the melons are not like the sweet ones from later in the summer so we might add a bit more sugar depending on the sweetness of the fruit.     Refreshing and I'm sure it would kill a thirst in hot days. I found it bitter/sour like it needed more sugar. Made for Team Cooks With Dirty Faces" for ZWT5
