Very Low Fat, Low Sugar Bran Muffins

I came up with this recipe while trying ideas to get more fiber in my diet, with less sugar and fat. These are easy, good for you, and I think pretty tasty as well.

SERVES 12 , 12 muffins (change servings and units)

    Preheat oven to 350.

    Pour cereal into a small bowl, cover with 1 cup skim milk, and let sit for ten minutes.

    Add all ingredients in a large mixing bowl, stirring with a spatula to combine.

    Spoon into a greased 12 muffin baking dish, filling to top of cups.
  5. 5
    Bake for 25 minutes or until a tooth pick stuck in middle comes out clean.

    Take out of pan to cook, the seal in a container or eat at once.
