This was great! I actually used 1/2 cup red lentils instead of the red beans and cooked it on the stovetop (takes a lot less time). The blend of vegetables and spices was amazing! And, very low Weight Watchers Points - 3 for 1/2 of the pot! Thanks for the great suggestion!
