Umeshu (Plum Wine)

Wondering what to do with those extra green plums growing on your tree? Why not put a few aside, and make Umeshu, and give it for Christmas?

2 quarts (change servings and units)

Ingredients

  • 2 lbs green plums
  • 3/4 lb rock sugar
  • 2 quarts sake (or soju)

Directions

    Clean and remove stems from plums. Individually dry them with a sterile cloth.
  2. 2
    Layer the plums with rock sugar into a large, non reactive container (glass jars?), and pour the soju over them.
  3. 3
    Seal well and store the jars in a cool dark place for 3 or more months. After 3 months it can be drunk, but it's better the longer you keep it.
