Ultimate Sesame Spinach

Recipe #397913 | 30 min | 15 min prep | add private note

By: L'ecole
Nov 5, 2009

Our neighbor, Mary, prepared this for us one night, and we fell in *love*! The sugar and rice vinegar combo distinguish this version from the others that are posted.

SERVES 4 (change servings and units)

Ingredients

  • 1 1/2 lbs spinach, stems removed, soaked in a bowl of water and drained but not dried
  • 3 tablespoons sesame seeds
  • 4 tablespoons soy sauce
  • 2 teaspoons sugar
  • 1 tablespoon rice vinegar, unseasoned
  • 2 tablespoons dashi (can substitute chicken stock)

Directions

  1. 1
Put the spinach in a large, dry frying pan over medium heat. Cover and cook until the spinach is completely wilted, about 5 minutes. Drain in a colander and squeeze out any excess moisture. Chop the spinach coarsely.
  2. 2
Put the sesame seeds in a small, dry frying pan and toast over medium heat until light brown and fragrant, shaking the pan frequently, 3-5 minutes. Cool and grind the seeds to a powder in a clean coffee grinder or mortar and pestle.
  3. 3
Combine the soy sauce, sugar, rice vinegar, and dashi and stir until the sugar is dissolved. Add the sesame powder and stir until well blended. Pour dressing over spinach.
