Tuna and Pepper Panini Melt

I recently acquired a panini grill and this is the first recipe that I tried on it. And is it ever good!

SERVES 4 (change servings and units)

Ingredients

    In a bowl, mix together the tuna, red pepper, celery, green onions, mayonnaise, yogurt, capers, cumin, pepper, salt and cayenne pepper.

    Cut the buns in half horizontally.
  3. 3
    Spread the tuna mixture evenly over the bottom half of each.
  4. 4
    Sprinkle each evenly with cheese.
  5. 5
    Replace the bun tops.
  6. 6
    In a nonstick skillet or panini grill, cook the sandwiches over medium heat, pressing often to flatten and turning once (no need to turn if using a panini grill), for about 5 minutes or until crusty and the cheese is melted.
