I adopted and adapted this recipe from a restaurant in Rochester, MN. while visiting a hospital there. It has a fantastic flavor and is quick and easy to make.

SERVES 15 , 1/2 cups (change servings and units)

Ingredients

Directions

    Prepare penne pasta per box directions, al dente' is best.

    Drain and cool completely.
  3. 3
    Add remaining ingredients and mix well.
  4. 4
    Place in a bowl with an airtight lid and refrigerate for at least two hours.

    Stir well prior to serving.
