Tomato Pie/Tomato Bread

Locals make this with Creole tomatoes.

SERVES 6 , 6 slices (change servings and units)

    Preheat oven 350 degrees.
  2. 2
    Thoroughly mix mayonnaise, cheddar cheese, minced onions, herbs and pepper; set aside.
  3. 3
    In large mixing bowl, mix together baking mix, baking powder, buttermilk and water.

    With floured fingers, pat mixture into the bottom and sides of a lightly greased and floured 9" pie pan.

    Bake crust 10 minutes. Remove from oven.
  6. 6
    Arrange tomato slices on top of crust to completely cover; cut smaller pieces of tomato to fill in gaps. At this point you may want to lightly salt the tomatoes.

    Spread mayonnaise mixture over tomatoes and sprinkle with parmesan cheese.

    Bake until biscuit is nicely browned and top is bubbly, about 30 to 40 minutes.

    Cut into wedges and served still warm or if made ahead, briefly reheat in low oven.

    Refrigerate leftovers.

OMG - this is so delish. I will be making this alot. The only change I made was to add some cooked bacon - kind of a BLT. The leftovers were great too!

    A wonderful main dish for a light meal and great as a side dish with ham. We will reduce the mayo on our next try, but it's great as is. Cutting the slices of tomato in half (half moons) made it easy to cover the entire surface of our 10" quiche pan. Thanks.

    We really enjoyed! Delicious flavor and makes a beautiful presentation. I used 2 individual tart pans. Served this with a crisp green salad and ham. Thanks gailann! I will make this again soon! Made for Holiday Tag
