Thomas Family Baked Coconut Shrimp With Pina Colada Dip

sweet and crunchy coconut shrimp with a heavenly pina colada sauce. So easy and delicious, why wouldn't you make it? Make a big batch of pina coladas before hand and half the work is done! I formulated this when I wasn't satisified with some of the baked coconut recipes I found and I wasn't about to fry anything. I hope you like it as much and my family does.

SERVES 4 -6 (change servings and units)

    pre-heat oven 500 degrees.

    make a batch of pina coladas, pour yourself some and turn on jimmy buffet.
  3. 3
    combine the yogurt/sourcream and pina colada and chill for serving.
  4. 4
    put coconut flakes and panko in a large storage bag.
  5. 5
    dredge shrimp in cornstarch ( shake off excess before next step).
  6. 6
    dip shrimp in egg whites.

    toss in the coconut/panko bag ( give a little shake with each one so it gets coated before you throw the next one in)

    I usually do 1/2 batch first and remove them from coconut/panko bag and then do the rest).

    spray baking sheet liberally with non- stick spray.

    place shrimp on sheet and spray again,liberally.

    bake each side for 7-10 minutes.

    serve with pina colada sauce -- and another drink!

What a treat to be able to eat my favorite shrimp dish, and keep the fat, and calories within reason. I used Yoplait's Pina Colada yogurt as the dip and threw in a little extra coconut for flavor. It was seventh heaven, thanks for posting
