The Realtor's Chocolate Caramels

These are AWESOME! Chewy, gooey, chocolatey caramels. And they're easy to make. I was shocked when I found out how easy it is to make caramels and they are sooo much better than store bought.

SERVES 64 , 64 pieces (change servings and units)

    Grease the inside of an 8x8 inch baking pan, line with parchment paper that over hangs the sides so you can pull it out like it has handles. Grease the parchment, too.

    Put everything in a large heavy bottom saucepan. Stir with a wooden spoon over medium heat and bring to a boil, letting chocolate melt completely.

    Turn heat down to medium-low and cook, stirring constantly, for 30 minutes. It should boil very gently during this time. It's very important to stir constantly because it will burn really easy whike cooking. When it's cooked the candy will be very thick.

    Pour it into the prepared pan and set on cooling rack to cool completely- about 2 hours. Cut into 3/4 inch squares.

Certainly easy to make, and I even made two substitutions that make the recipe vegan! I'll submit it that way for the DB.

    I made this two weeks ago and shared it with a group of co-workers. I plan to make it again this weekend and hopefully won't have to share - this is delicious! The 30 minutes of stirring was definitely worth it! thanks for posting this recipe. Made and enjoyed for PAC, Fall 2009
