This lively dressing takes shrimp salad to a new level. You could add a little fresh crab meat, mussels or cooked squid to the salad too.

    Place the lemongrass in a bowl with the lime zest and juice, chili pepper, scallions, cilantro, fish sauce and 4 tbs cold water.Arrange the salad leaves in a bowl. Place the shrimp on top and drizzle with the dressing.Serve immediately.
