This recipe is always a hit at parties

SERVES 10 -15 (change servings and units)

Ingredients

  • 5-6 scallions, sliced
  • 2 red bell peppers, diced

  • 1 (16 ounce) can garbanzo beans, rinsed and drained

  • 1 (16 ounce) can black beans, rinsed and drained

  • 1 (16 ounce) can corn, rinsed and drained

  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 bunch cilantro, chopped finely
  • 3 garlic cloves, minced
  • 6 ounces zesty Italian dressing (or more to taste)
  • 3 small hot green peppers, diced very finely. .. (chiles)
  • salt and pepper

Directions

    Mix all of the ingredients together and add the Italian dressing.

    Mix well.

    Refrigerate until served.

    Can be made ahead of time.

Awesome! So fresh tasting considering the number of canned items. I used generous amounts of sea salt and ground peppercorns, and omitted the Italian dressing. It was delish!
