Swiss Oatmeal Soup

This is from "The Swiss Cookbook". I haven't made it yet. The author says that it is traditional.

SERVES 4 (change servings and units)

Ingredients

  • 1/2 cup oatmeal
  • 1 teaspoon salt
  • 1/2 cup butter
  • 4-6 cups water (or consomme)
  • 2 potatoes, peeled and cut into thin slices
  • 2 cups grated emmenthaler cheese
  • 1 dash nutmeg (optional)

Directions

  1. 1
    Saute the oatmeal and salt in half the butter until golden brown.
  2. 2
    Add the water; bring to a boil. Cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel. This will take about 90 minutes.

    Add the sliced potatoes. Cook about 30 minutes until they are tender.
  4. 4
    Stir in the grated cheese, remaining butter and nutmeg if desired. Add additional hot water if it's too thick.
