Sweet Corn (Freezer)

You'll want to put a lot of this in your freezer when fresh sweet corn is available. It will get rave reviews when you serve it during the winter. From the kitchen of Wanda Cupp Thornburg, Moberly MO.

SERVES 10 -12 , 2 quarts (change servings and units)

Ingredients

  • 7 cups raw sweet corn, cut off the cob (DO NOT BLANCHE)
  • 1/2 cup margarine
  • 2 tablespoons sugar

Directions

    Mix the three indgredients together. Boil 3 minutes. Pack into freezer cartons. Cool to room temperature, seal cartons, and freeze.

    TIP #1: Try one of the bi-color varieties like Honey & Cream.
  3. 3
    TIP #2: Be sure to purchase a corn cutter gadget. You can find them in the OXO line at Bed, Bath & Beyond. There's also a big selection online at Amazon.
