Super Quick Pea and Mint Soup

So quick, so satisfying, so healthy, just go for it. yum yum yum! The colour is outstanding and the flavour very delicate and sweet.

SERVES 1 -2 (change servings and units)

Ingredients

  • 1 cup frozen peas
  • 1 1/2 cups chicken stock
  • 3 sprigs mint (leaves only)
  • salt and pepper

Directions

  1. 1
    In a pan heat the peas and chicken stock together and once boiling take off the heat.

    Blend in the blender until smooth with the mint.

    Add salt and pepper and enjoy enjoy enjoy!
