Super Healthy Zucchini Muffins

Moist and heavy, these muffins are kind of bland (which is why I suggest adding mix-ins, like 1/2 cup raisins or pecans). To make them taste really good, frost them with vanilla frosting (although it makes them considerably less healthy).

SERVES 24 , 24 Muffins (change servings and units)

Directions

    Beat the eggs until they are light and foamy.

    Add sugar, applesauce, and zucchini.
  3. 3
    Blend well with spoon.

    Mix dry ingredients and add to egg mixture, blend well.

    Add optional mix-ins.

    Spoon into greased muffin tins.

    Bake at 325°F for 20 minutes.
