Summer Perfection With Lime and Berries

A perfect summer combo that's easy to assemble last minute as long as you have the lime curd already chilled in the refrig. Take advantage of seasonal fresh berries and contrasting flavor of fresh limes in this over-the-top very popular dessert. Substitute with lemon curd if necessary.

SERVES 8 , 8 slices w/ topping (change servings and units)

    Make ahead Recipe #41567 (www.recipezaar.com) for 2 1/2 cups of excellent Lime Curd. Refrigerate in glass jar until chilled. Can be same day or a day ahead. (Some gourmet stores carry lime curd if you don't have time to make it.).

    Whip heavy cream and pinch of salt until firm.
  3. 3
    Take half the curd (about 1 1/4 c.) and fold by hand into whipped cream.

    (May be refrigerated for up to 2 hours if covered in plastic).

    Lay cake slices in center of 8 dessert plates.

    Spread each piece with about 2 TBSP of pure lime curd.

    Divide whipped cream among 8 servings, about 1/2 cup each.

    Randomly sprinkle berries over each plate.

    Garnish with mint sprigs.

    Serve immediately for a fabulous, fresh, summer dessert.

Just now put the 'lime curd' recipe into my 'to make & review' cookbook, but in the meantime I had enough lemon curd on hand so used that for this recipe! AND, since I also had enough fresh blackberries & raspberries on hand, I used a combo of them here (When I finds 'em fresh I buys 'em!) & had we had a very tasty dessert that was shared with a neighbor couple! A WONDERFUL KEEPER! [Tagged, made & reviewed in New Kids on the Block tag]
