Strawberry Blancmange / Pudding

I expanded on a simple blancmange recipe and adapted it to make it a special strawberry creation...since I now have a ton of strawberry Nesquik and want to be creative with it. And it turned out very yummy. :D It looks like it took a lot of effort but it didn't. This would probably make an awesome kid pleaser as well. NOTE: Cooking time does not include cooling/setting time. Vegans and the lactose-intolerant-- if you use soymilk, rice milk, almond milk, etc. this will not set. You may want to try a tofu-and-blender approach instead.

SERVES 4 , 20 oz (change servings and units)

Ingredients

  • 2 1/2 cups milk (divide into 2 cups and 1/2 cup)
  • 5 tablespoons cornstarch
  • 3 tablespoons sugar
  • 2 tablespoons strawberry-flavor Nestle Nesquik powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Directions

    Boil 2 cups of milk in a saucepan.
  2. 2
    While it's boiling, combine the 1/2 cup milk with the cornstarch, sugar, salt, and Nesquik. Stir until smooth.

    Turn the heat off, wait about 30 seconds, then add this mixture to the boiling milk and meld completely. Turn the heat back on.

    Keep cooking, stirring constantly, over very low heat until thickened. (About 5-10 minutes). Be VERY careful that nothing's sticking to the bottom of the pan and burning!

    Turn the burner off. Add the vanilla extract and stir it in then let sit on the burner for another minute.

    Pour into custard cups/ramekins. (Fills about four 5-oz ramekins or two 10-oz ramekins).

    Let it set for at least 2-3 hours in the fridge.

    Top with some fresh sliced strawberries and/or whipped cream to serve, and enjoy!
