Strawberry and Cream Cupcakes

Pop! Cake mix and soda create a delicious strawberry-and-cream dessert. Taken from Betty Crocker website — Posted for the Think Pink Event Oct. 09

SERVES 24 , 24 cupcakes (change servings and units)

Ingredients

  • 1 (18 1/4 ounce) box white cake mix (calls for Betty Crocker Supermoist)

  • 1 1/4 cups strawberry soda
  • 1/3 cup vegetable oil
  • 3 egg whites
  • red food coloring

  • 1 (16 ounce) can cream cheese frosting
  • 1/2 cup white candy sprinkles
  • fresh strawberries, if desired

Directions

    Heat oven to 350°F (325°F for dark or nonstick pans).
  2. 2
    Place paper baking cup in each of 24 regular-size muffin cups.
  3. 3
    Make and bake cake mix as directed on box for 24 cupcakes, substituting soda for the water and using oil and egg whites.

    Cool in pan 10 minutes; remove from pan to cooling rack.
  5. 5
    Cool completely, about 30 minutes.

    Stir 1 or 2 drops food color into frosting.
  7. 7
    Frost cupcakes.

    In small resealable food-storage plastic bag, place sprinkles and 1 drop food color; seal bag.

    Gently shake and massage sprinkles until mixture is various shades of pink; sprinkle around edges of frosted cupcakes.

    Garnish with fresh strawberries, if desired.

These were great!! I love the subtle strawberry flavor from the pop!! Even DH liked these and he's not one for strawberry flavored anything! I didn't have red food coloring so my frosting was white and I just had rainbow sprinkles so I didn't follow the recipe exactly but they still tasted delicious!!! Very moist and tasty and the cupcakes were such a pretty pink color!! Made for your Football Pool Win Wildcard Playoff Week...congrats!!!

    These were so easy to make and very moist. I made them for a club potluck and everyone thought they were great. Will make them again for "think Pink" month.

    These are delightful and so easy peasy! Made as directed, only my sprinkles were already pink so I could skip a step! Thanks, alligirl! Made for my PAC Fall 2009 co-host.
