You can also make this without the rum. From a cookbook called Mexican - Healthy Ways with a favorite Cuisine. Enjoy!

SERVES 4 (change servings and units)

    Hull the strawberries and cut them in half. Peel bananas and cut into chunks.
  2. 2
    Put the fruit in a food processor or blender, add in coconut milk and water. Process until smooth, scraping down the sides as necessary.

    Add the rum, grenadine and ice. Blend until smooth and thick.
  4. 4
    Serve immediately, garnish with sliced strawberries if desired.

Very tasty, although I would prefer it with less rum (no rum would be fine with me), made half a recipe, and omitted the ice. Made for the Bodacious Brickhouse Babes for ZWT5.

    Great and refreshing. I halfed the recipe, just for me and my daughter. We are going to have this again this weekend as I will be making it for family members. Thank you, easy and good, can't get any better then that! Made by member of "Cooks With Dity Faces" for ZWT5 Zingo.

    Yum. A smoothie with a bit of kick and it's healthy, too. I prepared this exactly as written including the rum. The coconut milk was low fat. Made for Jammin' Java Jivers ZWT5.

    This was the perfect afternoon refreshment needed on a 90+ degree day!!! I made 1/4 of the recipe and don't like coconut so used 2% milk in its place, now wish I had made 1/2, and loved this yummy fruity cocktail!!! I did add a bit of whipped topping for garnish!! Thanks for sharing Sue!!! Made for zingo of ZWT 5.
