Another Realtor in my office gave me this wonderful recipe. It's absolutely delicious with coffee or tea in the morning or as an afternoon snack with lemonade!

SERVES 8 -10 (change servings and units)

Ingredients

    Preheat oven to 350 degrees.
  2. 2
    Combine flour, salt, baking soda, cinnamon, and nutmeg.
  3. 3
    In another bowl, mix together sugar, applesauce, eggs, and vanilla.
  4. 4
    Fold the carrots and pineapple into the applesauce mixture.
  5. 5
    Toss the pecans and raisins in the dry ingredients and then combine both mixtures and stir just until all ingredients are moistened.

    Pour batter into 2-8x4" loaf pans and bake 55-60 minutes.
