Steamed (Braised?) Fried Eggs

These are fried eggs "over-easy" without turning them over. It's a quick method to make eggs over easy without the mess of turning and it uses much less fat for the cooking.

2 eggs (change servings and units)

Ingredients

  • 2 eggs
  • vegetable cooking spray
  • 2-3 tablespoons water
  • salt and pepper

Directions

  1. 1
    Spray a non-stick frying pan (size to accomodate the number of eggs) with oil spray. I often use well-seasoned cast iron skillets.

    Place the pan over medium heat.
  3. 3
    When pan and oil are heated, break eggs and place in pan with some separation between eggs.
  4. 4
    When the egg whites begin to turn opaque (about 1 minute depending on how hot your "medium heat" is, pour water into the pan
  5. 5
    Cover the pan tightly
  6. 6
    Cook for 30 seconds before looking at the eggs
  7. 7
    Cover the eggs after checking and cook until the eggs are the desired degree of doneness.

    Nice technique! I usually poach my eggs and sometimes they just seem a little too watery, this solves that. I will be using your method again. Thank you for posting!

    I have had a history of breaking yolks when making over easy eggs. It has been so bad that my husband has pretty much given up and just expects scrambled eggs. This recipe/method has changed everything! I successfully was able to serve him perfectly cooked, yolk intact, eggs this morning for breakfast!

    I do the same thing - it came to me a while ago that this was how to get sunnyside up eggs with the tops cooked - I hate uncooked egg whites - without the danger of busting the yolks as with easy-over. It works perfectly.
