Spicy Root and Lentil Casserole

A brilliant way of using any leftover root vegetables. A quick, filling and healthy winter warmer.

SERVES 4 (change servings and units)

    Heat the oil in a large pan and cook the onion and garlic over a medium heat for 3-4 mins until softened, stirring occasionally.
  2. 2
    Tip in the potatoes, carrots and parsnips, turn up the heat and cook for 6-7 mins, stirring until he vegetables are golden.

    Stir in the curry paste or powder, pour in the broth then bring to the boil.
  4. 4
    Reduce the heat then add the lentils, cover and simmer for 15-20 mins until the lentils and vegetables are tender and the sauce has thickened.

    Season to taste and serve.
