This rich and spicy cheese mixture can be shaped into a ball or log or packed into a crock.Serve with assorted crackers,celery sticks, apple slices, and salami wrapped-breadsticks. From a November 1988 issue of Bon Appetit from a "Cocktail Party" menu.

    Combine all ingredients in large bowl; cover and let stand until cheeses soften, about 1 hour.

    Using electric mixer, beat cheese mixture until fluffy, stopping occasionally to scrape down sides of bowl.

    Spoon cheese into a crock.

    (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before serving.).
