Spanish Roasted Tomato Salad

A simple but lovely way of serving tomatoes. This would go nicely with a Spanish tortilla and even as part of a tapas meal. I found the recipe on the Orce Serrano Hams website. Caster sugar is simply superfine sugar.

SERVES 4 -6 (change servings and units)

    Preheat oven to a medium heat.

    Half the tomatoes and place in a single layer in a roasting tin.
  3. 3
    Drizzle with the oil and vinegar and mix well.
  4. 4
    Roast for about 20 minutes and then add the sugar.
  5. 5
    Roast for another 25 minutes. When they are ready, they will be soft and lightly caramelized.

    Serve warm.

These tomatoes came out carmelized beautifully, were so juicy and luscious! I added the sugar after they were in the oven for 20 minutes, and roasted them at 350. I think when making them again, I'd probably add garlic, as I'm such a garlic fiend, and if the tomatoes are super sweet, would forego the sugar. Thanks for posting the recipe! Made for ZWT5.

    Reviewed for ZWT5 Spain Great tomatoes! So easy to put together and baked in the oven alongside Salsa Chicken (3 Ww Points). Served also with BBQ Joes for a totally delicious meal. My whole family loved these tomatoes...sweet, soft and juicy...mmmmmm. Thanks Sarah-Jayne. Photo also being posted.
