Southwestern Corn Salad

Spicy and sweet, delicious, and easy! You probably have the ingredients in your pantry already. Best if let sit overnight, plastic-wrapped, to get rid of that sharp onion flavor. If your onion is ultra-sweet, you can skip this step.

SERVES 4 -6 (change servings and units)

Ingredients

SALAD

  • 1 (8 3/4 ounce) can corn niblets

  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, chopped

DRESSING

  • 1/4 cup honey
  • 1 teaspoon hot sauce, less if you like
  • 1/4 cup reserved juices, from corn
  • 3 tablespoons fresh-squeezed lime juice

Directions

  1. 1
    Mix together the corn, onion, and bell pepper.
  2. 2
    Whisk together the honey, hot sauce, reserved juices, and lime juice. Be sure to break up all the honey.
  3. 3
    Toss all ingredients together and refridgeirate overnight (see headnote.).
