Southwest Chicken

This dish has Chicken sauteed in southwestern spices, rice, beans, tomatoes and corn.

SERVES 8 (change servings and units)

Ingredients

Directions

    On medium heat, saute onion in olive oil until translucent. Cut chicken into small strips, removing tendons. Add chicken and cook until it looses pink color. Stir in spices and cook till fragrant.

    Add tomatoes, and lower heat to a simmer. Cook for 15 minutes of so.

    Add beans, corn and rice. Let heat threw.
  4. 4
    Serve with avocado slices and Monterrey Jack cheese.
