Southwest Cheesy Chicken Roll-Ups

Flattened chicken breasts with a crunchy coating to hold a yummy cheese filling.

SERVES 4 (change servings and units)

    Preheat oven to 350 degrees F.

    In medium bowl, stir together cream cheese, garlic powder, jalapenos and corn; set aside.
  3. 3
    Place broken taco shells in re-sealable plastic food storage bag and seal. Crush with a rolling pin until coarsely ground.

    Pour shell crumbles into shallow dish and stir in chili powder.
  5. 5
    Place chicken between two sheets of wax paper and gently pound until 1/4 of an inch thick.

    Spread butter over one side of each breast.
  7. 7
    Place about 1/3 cup cream cheese mixture on center of buttered side of chicken breast and roll up chicken breast.

    Pour buttermilk into shallow dish and dip each chicken roll in the buttermilk.

    Coat with taco shell crumb mixture and then secure with toothpick.

    Place the chicken rolls in a ungreased 2-quart glass baking dish and drizzle with honey.

    Bake 35 to 45 minutes or until chicken is cooked through.

    Sprinkle with Mexican cheese blend and bake 4 to 5 minutes longer.

    Serve with salsa and sour cream.
