Sofla Lunch Salad for One - Light Ranch

This is a salad I made frequently in the past and have recently revisited.

SERVES 1 (change servings and units)

Ingredients

  • 1/4 ripe mango, diced
  • 1/2 ounce wasabi peas
  • 1 tablespoon cottage cheese, California style
  • 5 ounces lettuce
  • 1 tablespoon light ranch dressing

Directions

    In a salad bowl, add lettuce, mango, cottage cheese, wasabi peas and dressing.

    Toss.

    Enjoy!
