So-Simple Cauliflower Mash

Just as it says, it's so simple to make and just so delicious to eat - What a side dish for any meal!! For a smoother potato-like texture, purée cooked cauliflower and dressing together in food processor or with immersion blender until very smooth. This recipe can be easily halved. Just prepare as directed, cutting all the ingedients in half. Makes 4 servings.

    Bring water to boil in large saucepan. Add cauliflower; cool 15 minutes, or until caulifower is very tender. Drain cauliflower; return to saucepan.

    Add dressing; mash until cauliflower is lifht and fluffy.

    Sprinkle with onions.
