Smoked Salmon, Onion, & Cucumber Brunch Salad

Ingredients

• 1 lb smoked salmon, good quality
• 1 sweet onion, Preferably vidalia
• 1 English cucumber, thinly sliced in half moon shapes
• 1 tablespoon rice wine vinegar
• 1 tablespoon olive oil
• 1 teaspoon honey
• 1 tablespoon parsley, fresh chopped
• 2 teaspoons chives, fresh chopped
• 1 teaspoon lemon zest, finely minced
• 1 clove roasted garlic, finely minced
• salt
• pepper
• cream cheese
• bagel

Directions

   In a glass bowl, whisk together vinegar, olive oil, honey, garlic, and lemon zest.

   Add onions, cucumbers, chives, parsley, and smoked salmon to the bowl and toss. Season with salt and pepper to taste.

   Serve immediately with cream cheese and bagels. This can be refrigerated for up to 4 hours maximum.

   I like this dish for brunch with a crisp pomegranate mimosa :).
