After eighteen long years of ballet class, soccer games, and piano recitals, you've finally shipped them off to start their career as a college co-ed. The house is empty, quiet, and all YOURS! You should be able to relax and savor the feeling of watching whatever you want on TV and knowing those leftovers you put in the fridge will be there 2 hours later! But something is nagging at you, right? Even though they are physically gone, you are still worried about them. Are they studying? Do they have clean clothes? Are they eating!? While you can only helplessly hope they are hitting the books and the laundromat, we are here to help you with that last issue. While the University probably offers some boring and bland meals in the mess hall, why not give your co-ed some fabulous and easy recipes they can create right in their own dorm room! Buy your college student a crock pot (if its allowed by your resident assocation)- I used to make pot roast in my dorm and do instant mashed potatoes in the microwave- I had all of my floor residents begging at my door for "real food"!

Even the child that you have taught to cook may still need some attitude adjustment because all those recipes were probably for three or more servings. Suggest that they type SOLO into the search box for some smaller fair ... Hey, you might find some great empty nester food as well.

There's a really great cookbook I got my college daughter for Christmas called "A Man, A Can, and A Plan" - and one by the same author for Microwaving. It is a really great book for either guys or girls. It has those thick pages like preschool books as well as pictures of what to buy. She loves them! They are also healthy recipes as they are put out by Men's Health Magazine. Pam

On a sad note, why leave out the freshman guys, who probably need more help cooking, than the gals? "College Co-ed" does seem to address only half the college audience ... On a happier note, I have to find the book, but when I was last in Paris, I ate at a wonderful fish & seafood bistro, close to the Convention Centre, specializing in southwest French cuisine (their bourride was to die for!) ... the book was written by the chef/owner for his daughter when she was leaving home to go to college ... he explains, father to daughter, how to make all the comfort food she grew up with ... and it mostly involved 1-2 pots (no microwaves!), and very little time ... simple, presentable, fabulous — as only the French can do!

Oh, dear! I have to remember back about (should I even date myself?) twenty years or so... Let's see...Half of my closet became the pantry (wasn't the clothes hog like my roommate) and I came to school complete with Dutch ovens, electric frying pans and recipe books. Bought a crock pot while I was there and every Friday night, Campus Crusade showed up for dinner. The whole group! What fun we had eating casseroles (what else do you feed over twenty people on a college budget?) sitting all along the dorm hallway, singing songs and acting goofy! I hope all you new and old college students have as much fun as we did. Oh yes, do remember to study for exams...in between the great meals!

When I was a sophomore, I had an electric skillet and rice cooker in the dorm. With those two I survived against the bland cafeteria food. We even had a fish fry in my room!

after 2 years of working i am back to university. I do not live in a dorm (TG!) but i have to take lunch. I work out every day and my hubbie does not like me to come home totally stressed out and hungry. Some of these really helped me (us)
