Some of us live each moment as it comes, never planning ahead or worrying about the future. While others can't rest until they are fully prepared for whatever the future may bring. If you fall into the second category, then Home Canning might be just the thing for you! Much like a squirrel storing up nuts for the winter, canning is the age-old process of preserving whatever is fresh now by storing it in pressurized or heated jars so you can enjoy summer's produce in the colder months to come. With fresh produce in such abundance, now is the perfect time to jump in and give it a try; and our Canning, Preserves, Dehydrating Forum is just the place to get started. Our expert hosts, Jellyqueen, Jeff Hixson, and Axe are standing by and can answer any question you may have when it comes to preserving food. In a few months when you are still enjoying the pure and sweet bounty of your garden instead of the over-processed versions that come from the store, you'll be one happy squirrel. Apple season is coming up...try my Crock Pot Apple Butter and save as gifts for Christmas. I love finding a great sale on granny smith apples and making a big batch of this. Pam

This might be a strange question, but I am making raspberry jam for the first time and I am going to be using the canning pot that was left behind in our house by the previous owner who used to do quite a bit of canning. However, the canning pot has a hole in the bottom with a bit of material tied in knots to keep it in place. Does anyone know what this is and if I can still go ahead?

I've never heard of one with a hole in the bottom - how would the water stay in? I would go to the canning forum and ask there.

the above brought back memories... When my granddaughter was very young, I asked her if she wanted to help me can tomatoes. She replied, "Nana, I CAN'T tomatoes!"

Most people think I learned everything about canning at my mother's knee - not true! Anytime there was a question, I ran to the local County Extension Office - they have got the answer to almost everything, and brochures and books on top of that!

If there is a whole in your canning pot, you need to by a new one, it will not hold water

I am very afraid of canning my own preserves and relishes. I am a first timer and all I can remember people talking about a long time ago is people getting sick from homemade canned items. No one in my family past the art on to me. I really want to do this......

I never learned canning from my parents. We all did the picking but they did all the canning. I learned how to can by using a cookbook. I only do jam, fruits in syrup and apricot nectar. Too scared to dry veggies and meat. I will leave those in my freezer.

This is my first try at canning and i'm hooked! I always thought it was too hard or took way too long. not so, i've found out!! I have successfully canned 3 different types of pickles, and made a fantastic zuchinni relish. Not bad for a first timer.

To me canning food is like baking for some people! I learned a lot from my grandmother who canned a lot. She was always doing something in the kitchen.

My mother left behind all of her canning supplies, including an old fashioned pressure canner. I "helped" "hindered" her so many times when she canned green beans. After she died, I wanted to carry on the tradition, so I taught myself how to can with some help from a neighbor. My mother's beans were the best and mine will never measure up....but they were decent. I hope to teach my kids how to can someday...in honor of my mother!
