Love seeing the fruits of my hard labor sitting on my shelves during the hard winters we have here. It's almost like a walk in the garden, but I'm trudging through 3 feet of snow. Sure makes canning during the heat of summer and early fall so worthwhile.
I love canning and pickling in the fall as well and have always believed that somewhere waaaay back in my family history I must have come from a hunter/gathere tribe!! Nothing gives me greater joy or satisfaction than finding a patch of wild berries or tending to my vegetable garden and then canning or pickling and seeing the end result all lined up in color coordinated rows on my shelves!! It tastes so good when it is -40 with the wind chill!!!
I started canning 35 years ago, when my sister-in-law sent us her homemade jams and spiced fruits. I enjoy trying new canning recipes, as well as making my tried-and-true standards. Canning has been a challenge this year here on the south-west coast, as it has been very hot, with more 90+F weather due next week! Three feet of snow sounds WONDERFUL right about now. Nevertheless, my large fireplace mantel is covered with jars of jams and salsas, and I just might make a few more batches of jam or pickled peppers before I put away the canning equipment until next season. I love to give these goodies as gifts during the holidays.
Hello.. new to this site.. but excited to be here.. I am looking for a good recipe for pickling banana peppers. I tried one recently and the peppers came out very mushy and stringy.. any suggestions for a good banana pepper ring canning recipe that does not turn the peppers so soft???
