Shrimp With Pesto Cream

Great results for a stovetop dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat olive oil in large skillet over medium heat.
  2. 2
    Saute onion until tender and translucent.
  3. 3
    Stir in garlic and butter; saute until soft, about 1 minute.
  4. 4
    Dissolve flour in half-and-half, then stir into butter/garlic mixture.
  5. 5
    Season with salt and pepper; simmer 4 minutes, stirring constantly.

    Add cheese; stir until melted.
  7. 7
    Stir in pesto. Add shrimp, mushrooms and tomatoes.
  8. 8
    Cook 4 minutes or until heated through.

    Toss with pasta and coat evenly.

We loved this rich, creamy, delicious pasta! My little girl said "Mmmm... this is great!" and she proceeded to scarf down her dinner while making all kinds of comments about how much she liked this and wanted to have it again. I liked that there was alot of sauce and it wasn't dry. The only change I made was to cut back the pesto to about 1/3 cup. I will be putting this one into the rotation! Thanks GailAnn!

    Oh, but this is good! This is one of those things that could be described as "comfort food with a gourmet touch," as it's pleasantly indulgent with treats like shrimp and pesto. We used firm, dark Crimini mushrooms and they fit in beautifully. Made with pleasure for PRMR.
