From the Ulimate Gullah cookbook.

SERVES 6 (change servings and units)

Ingredients

    Boil shrimp.Remove shrimp from water and allow to cool. Remove shells, heads and tails. Devein. Combine pepper,onions, relish, mustard, seasoning, mayonnaise, sugar, celery. Mix well. Add shrimp. Taste. Add Gullah Luv seasoning or salt and pepper mix if needed or desired. Blend well. Add chopped boiled eggs (optional) and mayonnaise, mustard and sugar as needed. Taste. Serve on a bed of lettuce. Top with slices of tomatoes. Sprinkle lightly with parsely.

I love this salad; the mustard really added to the flavors. I think I probably added a leetle more mayo than called for--makes a wonderful creamy blend of sweet and spicy(I used some Creole spice for the Gullah Luv). Will make this again! Much appreciated, Ro!! Made for the Think Pink Event.

    Excellent. I cut this down for the two of us and adjusted the amounts some and it turned out great. I used the tiny canned shrimp (which I needed to use up) and it seemed to work very well for this. I didn't have relish so chopped up some sweet gherkins instead. Thanks for sharing.
