Shaker Lemon Pie from Ohio

This recipe reached us through a 1979 cookbook published by the Cape Cod National Seashore Women's Club.

SERVES 8 (change servings and units)

Ingredients

  • 2 large lemons, sliced paper thin
  • 2 cups sugar
  • 4 eggs, beaten well
  • prepared two crust pie crusts

Directions

  1. 1
    Mix together the lemon slices and the sugar and let this stand for two hours.
  2. 2
    After two hours add the beaten eggs.
  3. 3
    Pour the mixture into a prepared pie crust and top with the second crust.
  4. 4
    Bake in a preheated 450 degree F oven for 15 minutes, then reduce the heat to 375 degrees F and bake for a further 20 minutes.
