Scrunchy Apple Pie

From one of my favourite shows Australian Ready Steady Cook and Chef Manu Fiedel. Have estimate icing sugar and whipped cream amounts (think it would also be nice served with custard. Cooking and preparation times are estimated.

SERVES 4 , 1 scrunchy apple pie (change servings and units)

Ingredients

    Preheat oven to 190C fan forced (conventional 210C).
  2. 2
    Combine apples, cinnamon and sugar in a bowl and spoon mixture into a rectangular ceramic baking dish.
  3. 3
    Place fillo on a clean work surface and lightly spray one filo sheet with olive oil spray.
  4. 4
    Fold each in half crossway and scrunch into a rosette sheape.
  5. 5
    Place on the apple mixture, repeating with remaining fillo.
  6. 6
    Lightly spray the pastry again.
  7. 7
    Bake for 15 minutes or until golden.
  8. 8
    Dust with icing sugar and. cut and serve with cream or I think custard would work well too.

Wow Pat, what a ripper of a recipe. I made this for lunch today for a dear friend whose tummy can't cope with regular pastry anymore. I added some wild blackberries we had in the freezer and we ate it with custard. I had a 800g can of apples and managed to use all the filo.

    What a great idea for a quick and easy dessert! Simple to make, impressive to look at, and delicious. I'm sure any flavor of pie filling would be great with this. Served warm with vanilla ice cream and really enjoyed - thanks for posting the recipe!
