Sarasota's Simple Beer Cheese Spread

This is a great easy dip. Serve with warm pumpernickel bread, my ale biscuits, apple or pear slices, or some whole grain crackers. Make it ahead and refrigerate for a couple of hours before serving. Not just for an appetizer, spread on some whole grain bread with some fresh tomatoes and fresh onions or with some roast beef for a grilled sandwich that is really good and unique.

SERVES 8 -12 (change servings and units)

    Mix -- Simply add the cheese, onion, garlic, hot sauce and red pepper and add to your mixer. Beat on medium and slowly add the beer and beat until you have a smooth texture. Add salt and pepper at the end to taste. Transfer to a small bowl and cover with plastic wrap. Chill at least a couple of hours before serving.
