Sarah's Fruit Loaf

This is a recipe that I was given over ten years ago from my lactose-intolerant friend, Sarah. It's very easy and I've made variations of it using wholemeal flour, different dried fruit or chocolate chips. It's great with a little butter and a cup of tea.

SERVES 6 -8 (change servings and units)

Ingredients

    Mix sugar, fruit and bicarb in a mixing bowl.

    Melt the butter in hot water and add to mix, stirring well.
  3. 3
    Add the SR flour to the mix.
  4. 4
    Bake in a loaf tin at 180 for 35 minutes or until a skewer comes out clean.
