This recipe was copied from a magazine while I was waiting in the doctors office. I think it was in Canadian Living. I always meant to try it and now I am posting for safe keeping.

SERVES 6 , 1 loaf (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 375 degrees.
  2. 2
In a bowl using a fork, lightly beat eggs. Mix in 1/4 cup of salsa, breadcrumbs, onion, green pepper, chili powder, pepper, salt, and thyme.
  3. 3
Mix in turkey, incorporating evenly throughout. Shape into meatloaf pan. Add remaining salsa to top of loaf. Sprinkle with cheese.
  4. 4
Bake in oven for approximately 1 hour and 20 minutes. Cover with foil for first hour and then remove so cheese browns.
  5. 5
Let stand five minutes before serving.
