A mild tomato and sweet pepper salsa with cilantro and lime. Easy and fast to make using a food processor, but can be prepared by chopping the vegetables by hand if a food processor is not available. For a thicker salsa squeeze some of the juice out of the peppers and onions after processing and before adding the other ingredients and strain some of the liquid from the canned tomatoes before adding them to the mix.

SERVES 8 , 1/2 cup (change servings and units)

    Place peppers and onions in food processor and process until finely diced.
  2. 2
    Add remaining ingredients and pulse until ingredients are combined.

    Adjust seasoning to taste.
