It has graced our Christmas morning table every year since--and 2 loaves hardly last for the next day.  He usually makes them the week before and wraps in plastic wrap, puts in a plastic garbage bag, and freezes until Christmas Eve. I have added nuts, vanilla, cinnamon/ginger, changed the apples to dried cherries( non sugared). I have used applebutter in place of applesauce and trimmed down the honey. 			<description>This is so good! and it's perfect for the holidays. I had to use the Zaar converter for the amounts and it worked well. The bread turned out beautitully. With its spices and lots of dried fruit it is yummy and moist and keeps quite some time when you wrap it in tin-foil. This is the original recipe but I needed to add a bit of the water the fruit was cooked in. You might not need to. 			<description>Amsterdam stollen (or rather: stol) is just as traditionally connected to Christmas as its German counterpart, but is richer, more moist, and denser. Make sure that you use almond paste, not marzipan -- it is less sweet and a bit coarser than marzipan; if you can't find it, it is easily made yourself by grinding 150 g of blanched almonds with 150 g of sugar and one egg. I discovered that most of the hard work is taken out of making these, by proving &amp;amp; kneading them in the Bread Maker/Machine......unless you NEED to expel any frustrations, and then you MUST knead these yourself! You can make the crosses by either marking them before baking or, as I have done, by putting thinly rolled pastry crosses on top. Note: this bread keeps, wrapped tightly in plastic wrap and then foil, at room temperature 1 week. I haven't made this yet myself, but would appreciate feedback greatly if you make it before I do. If you use regular active yeast, you will need to adjust the amount of yeast, your dough will take longer to raise, the water temperature will need to be reduced and method of mixing should include proofing the yeast before adding it to the mixture. 			<description>I developed this recipe initially through trial and error, and have now got it pretty well 'right'. My husband and in-laws love this!
A few notes: you will need to keep an eye on the dough during mixing to make sure it isn't too wet. If it looks too wet, try adding 1 tbs of flour at a time until it looks like a rather wet ball of dough (it should be slightly wetter than ordinary bread dough).
I also made this to be slightly more 'healthy' than other banana breads - so feel free to add a bit more butter if you feel the need to be decadent!
EDIT: After one review, I realised that I should have said this is not intended to be a very sweet recipe; the main flavour should be the flavour of the banana. I think you could also use a lot of other ingredients instead of bulgur -- the point would be to include some combination of whole grains, dried fruits and nuts, then use bread flour rather than all-purpose, so that you can develop enough of the gluten to get a decent rise.  The bulgur pudding I started with had been made with milk, honey, dates, dried apricots and spices, so those flavors contributed to my final bread.  I then added dried cranberries, rolled oats, and sunflower seeds. All the recipes/items brought were turned into a GS Cookbook for our region.  When we received our cookbook - low and behold we were missing a few pages and of course this recipe was on those pages.  It has taken me 30 years to find this recipe (well I did not search all 30 but it did take over a year of hard searching to find it).  A man (no name ever given) from a community recipe group I belong shared this recipe after I posted again of my search.  My mom is thrilled as it is the recipe she remembers and now I will have more than just the memory of these yummy rolls but also of the history that goes along with it.  I probably would have forgotten that potluck dinner with the other Girl Scouts if it were not for this lost recipe that now has been found. I also substituted  1/4 cup wheat gluten, and 1/4 cup milled flax seed for some of the flour, and used 2 Tablespoons sugar and the rest was splenda.I had some frozen banana so I used that.

For 2 pound loaf, your machine must hold 10 cups or more. This is for a 2 pound loaf of bread.
Servings are a guess, since I had to list something. This loaf rises nice and high, so its a big sized loaf.

It actually took a recipe that CHILDREN can make for me to achieve 100% success with the elusive yeast!!! I followed the recipe with a few exceptions (subbed cardamom for the cinnamon &amp;amp; bumped up the raisins). I held my breath while it was in the 'rising stage', popped it in the oven with a prayer...and out came the most beautiful, amazing, wonderful yeast bread!!  

This is NOT a quick bread taste and not overly sweet. However, it is cerainly sweet enough to satisfy oneself, especially with a hot cup of coffee. But wait! There's more! If you think it's good the 1st day, it is OUT OF THIS WORLD the second day!!! The yeast bread softens and the spices really are more pronounced; it was sublime heated at Medium in the microwave for a minute and then liberal amounts of fresh butter slathered on the cut edges. I plan to serve this for years to come: as an afternoon snack, for a delicious but not too sweet Brunch addition...or just because!
