Sweet Potato Squash Casserole

This is from the Low Sodium Cooking newsletter. Better than the marshmallow topped stuff. Cooking time is for baking the raw squash and potatoes. You could try boiling or microwaving to cut the time. -- posted by WI Cheesehead

All-Time Best Sweet Potatoes

My mother-in-law and I just came up with this recipe while making Thanksgiving dinner yesterday. The beauty is that you can choose the cooking method that works best for you... stove top, oven, or crock pot--and they are nearly impossible to mess up. Fix and forget! We both agreed these are the best sweet potatoes we've ever had! -- posted by Lori Ann D

Vegetable Pie

This recipe is a favorite in my family and it is a must for all family functions. We call it vegetable "pie" even though it isn't really a pie but more of a casserole. It is an excellent side dish or on it's own as a vegetarian entree. -- posted by TyrusG

Sweet Potato Casserole

I used to think the sweet potatoes my mom and dad made every year for Thanksgiving and Christmas were so delicious.... until I had dinner at with my husband's family. I just about died when I tasted his mom's sweet potato casserole. The casserole has become a staple at every holiday meal- his family or mine as well as at holiday pot lucks I have work!
Sweet Potato Casserole Crunch Goodie

This is a deliciously sweet and tasty dish. My grandmother used to make it and we love it. It's so good you'll want it for your vegetable and your dessert.
Crock Pot Sweet Potatoes With Apricot Pie Filling

My mother thinks this sounds like the recipe she used at Thanksgiving that I have been bugging her for. She can't find her book and she found this at About.com. I tried it today to take to a friend's Ayyam-i-Ha party, as he was making turkey. It was really good and got many compliments. I have to admit that during its day of cooking it reeked of garlic and I was a little worried about it. But when it was all done, it smelled good and tasted wonderful. -- posted by mliss29

Sweet Potato Balls With Orange Rind (Omac)

I grew up with my Mom's sweet potato balls for Thanksgiving but I saw this in Food Editors' Favorites submitted by Diane Wiggins of St. Louis for the St. Louis Globe. I thought it sounded different and good. I don't want to lose it. You can make this weeks in advance and freeze it, then simply place it in the oven 20 minutes before serving time. These need to bake from a frozen state so this is a make ahead which is helpful on holidays! -- posted by Oolala

Grandma Louise's Sweet Potato Casserole With Praline Topping

This is my Grandma Louise's recipe for a sweet potato casserole. I swear it is the best thing I have ever eaten. She makes it every Thanksgiving, Christmas, and Easter. If you are bringing this to a party, it can easily be reheated by covering it with aluminum foil, placing it in an oven at 350°F, and heating it for about 20-30 minutes or until just bubbling. Enjoy!

Candied Sweet Potatoes

This recipe was adapted from another recipe I used to make as a cook. It can be stored in the fridge for up to a week and reheated to taste just as good (In fact, that's what we did at our restraunt!)
Preparation time includes baking the oat topping. When mashing, I suggest to mash by hand to get the right texture. When I have mashed with an electric mixer, it turns out more like baby food.
Yams can also be used instead of sweet potatoes. -- posted by Michigan-fan

Sweet Potato Balls With Vanilla Rum Sauce

I got this recipe from Paula Deen, play around with it some, and added my own concoction of a vanilla rum sauce- Mmmm. Now Paula makes them with giant marshmallow, I prefer the smaller ones (it's a little more work, but it's a better ratio of potato to marshmellow, and they're bite sized!) These are for those people with a bounce-me-off-the-wall-with-all-the-sugar-I-just-consumed sweet tooth. Not for the faint of heart. Blow away your in-laws during the Holidays with this gem. Or stab them with a toothpick, and you've got an awesome hors d'eurve on your hands. -- posted by Super-Wife

Rootin' Tootin' Roasted Roots - Roasted Root Vegetables in Paper

An easy to throw together recipe that I made to accompany several meals over the Festive period this year. The trick for these roasted roots is to cook them en papillote (in a paper parcel) for the first 30 minutes - almost oven steaming them, before opening up the paper and allowing them to brown and go crunchy and crispy around the edges! Sprinkle them with sea salt, cayenne pepper and freshly ground black pepper before serving them in the paper on a flat plate. You can also make smaller individual parcels for full dining impact!! Use whatever root vegetables you have to hand. The vegetables listed in this recipe are the ones that I used for the last few times of cooking this dish, but I can see possibilities of many more veggies, especially when they are in season. You can reduce the fat content in this recipe by adding just a teaspoon of olive oil and putting the vegetables in a zip-lock bag with the oil, then give it all a good shake, I went FULL fat throughout Christmas and the New Year period! However, I think now the diet is back on the agenda, I will roast these the low fat way! -- posted by French Tart

Sweet Potato Casserole

Every time we go to my Grandmother's to eat during the holidays, everyone digs into her sweet potato casserole. I usually do not like sweet potato casseroles, but her's really is the best, and I usually get seconds if there is any left. She found the recipe a local newspaper (probably in the Milan, TN newspaper.) And yes, marshmallows are included! -- posted by chef 1013062

Roasted Sweet Potato Fries

This is a wonderful recipe. its a kid and adult pleaser. Crispy on the outside and nice and soft on the inside. Every one at the table fights over these when i make them.
I've had sweet potatoes fries at restaurants several times. but i tried to come up with a baked/roasted version... reduce the fat increase the taste.
I like to cut up the potatoes length wise... so my fries are nice and long. also i like them to be about a 1/3 of an inch thick. -- posted by Maya's Mama

Sweet Potato-Jalapeno Casserole

Guests pedal their way to an outdoor feast in Key West, FL.Shaded by palm fronds and papaya trees, guests dining at the Shields home prop their vehicles in the backyard. Donna Shields beams as her guests start to arrive on bikes. There is a roast wrapped in green banana leaves next to a spicy-sweet potato casserole - which is what we prepared and it is an interesting dish!!! (The way I described it appears that we went to the dinner - no we just prepared the sweet potato casserole) Holiday gatherings are notorious for rich fare, but healthy options don't have to be mundane.;) Coastal Living Magazine, November 2008 Edition. -- posted by Manami

Grandma's Sweet Potato Crunch (Also Called Sweet Potato Souffle)

My grandma did not like marshmallows on her sweet potatoes, but she would make it half and half for the kids. When she would make this for the holidays there was always a little Maker's Mark in it, but you can also leave the bourbon out if you don't have any on hand. I make mine just like she always did, and I still sneak into the fridge with a spoon and go after these potatoes! This recipe makes enough for about 6-8 people, but we usually double it since it's so good cold. -- posted by CharlieGal

Whipped Sweet Potatoes and Bananas With Honey

From Tyler Florence, Ultimate Thanksgiving. I like the idea of using banana and honey instead of sugar for the sweetness. I can't stand those yucky, overly sweet sweet potatoes that we here in the south usually serve. This is a better option for those of us who enjoy sweet potatoes without all the sugar. I did retain the pecan topping but you can probably cut it back to 1/2 cup of brown sugar.
Sweet and Savory Squash Stew

This recipe combines some of the most iconic tastes of fall--butternut and acorn squash, sweet potato, apple--in a sweet and savory pot of deliciousness. I recommend serving with a dollop of sour cream. And cornbread.

All amounts for seasonings are estimates--I tend to season as I go and according to taste; I have a feeling these are underestimates. I will be sure to update the next time I make this with adjusted amounts. I used a smoked (pre-cooked) ham steak for this; I have also made it with other kinds of ham, with turkey sausage, and without meat altogether with positive results. -- posted by Tlharin

Paula Deen Sweet Potato Balls

This recipe came directly from the FoodNetwork.com website, and they were highlighted as one of Paula's Thanksgiving 2009 foods in her Thanksgiving Special aired in 19 November 2009 on Food Network . The original airing of the "Thanksgiving Special" was 10 November 2005...just in case you want to look back in the archives!

Some say the recipe is too sweet. So, you may want to test-drive the recipe for your own sweetness. These suggestions you might make as I did: I let the sweet potatoes fully cool before mashing, I omitted the orange zest and put just a small amount of orange juice (not a huge orange taste fan), and cut back the brown sugar to 1/3 of a cup. One reviewer said that she only used 1/2 of a large marshmallow after she had them oozing out with a full marshmallow. However, Paula Deen states that if you overcook your Sweet Potato Balls then the marshmallow will burst out of the ball. So be careful not to over-bake them if you choose a whole marshmallow. I chose to roll the balls in chopped pecans and then placed each ball in a cup of a nonstick muffin tin (the recipe made exactly 12 large balls--enough to fill a full tin). I also made some with the coconut mixture. Another option would be to roll them in oats, sugar, & cinnamon OR coconut & pecans. I put the filled muffin tin in the refrigerator overnight and baked the next day after removing my turkey from the oven. They came out perfectly! -- posted by McGowan Family

Recommend allowing time to meld the flavors. -- posted by Debbie R.
