Old-Fashioned Chicken Pot Pie With Sweet Potato Crust

The sweet potato gives a lovely orange color to the crust and an unusual flavor to pot pie. A little time-consuming to chop all the vegetables, so you could use already chopped frozen or canned vegetables for the most part (cooked according to package directions) to make it a little quicker and easier. Can be made ahead through step 14 and covered with tinfoil and frozen at that point. Thaw it in the refrigerator when you're ready to cook it, remove tinfoil and follow step 15 for cooking (may take an extra 5-10 minutes to cook through). -- posted by littleturtle

Slow Roasted Vegetable Soup

The vegetables become really intensely flavoured, sweeter and more mellow. It's lovely served for lunch on a biting cold day with a big chunk of bread and some cheese.
Sweet Potato Empanadas

These are delicious golden pastries stuffed with cuman scented sweet potatoes. The pastry is from JillAZ, see "Recipe #84430". I tried out this filling because I needed an additional vegetarian option for a wedding. While these do take a bit of planning ahead because the pastry and the filling have to chill, I have spread out the steps over several days. Once cooked and cooled, these beauties can be frozen and reheated at 400 degrees for about 10 minutes. These are great with Cuban mojo dipping sauce. -- posted by SassyStew

I grew up with my Mom's sweet potato balls for Thanksgiving but I saw this in Food Editors' Favorites submitted by Diane Wiggins of St. Louis for the St. Louis Globe. I thought it sounded different and good. I don't want to lose it. You can make this weeks in advance and freeze it, then simply place it in the oven 20 minutes before serving time.
Mock Chestnut Torte (Passover Cake)

This recipe is from the wonderful cookbook, "A Treasury of Jewish Holiday Baking", by Marcy Goldman. This pareve Pesach cake tastes like a rich but light chocolate cheesecake. It's wonderful with or without the glaze. If you don't mind a dairy cake, it's also excellent with a regular ganache (with cream, etc...). Kids will LOVE this and won't even know they're eating a vegetable (you cannot taste the sweet potatoes). Enjoy!

You can also serve this in squares, as French-style "petit fours." The glaze slicks this up but is not necessary — a dusting of cocoa is just fine. -- posted by blucoat

Autumn Root Stew

This is is the perfect recipe for harvest time or for a long cold winter. The ingredients are quite affordable and the yield is high. It is very filling and nutritious as well as freezing fairly well. This is an original creation. -- posted by Jagash Vanhal

Sweet and Savory Squash Stew

This recipe combines some of the most iconic tastes of fall--butternut and acorn squash, sweet potato, apple--in a sweet and savory pot of deliciousness. I recommend serving with a dollop of sour cream. And cornbread.

All amounts for seasonings are estimates--I tend to season as I go and according to taste; I have a feeling these are underestimates. I will be sure to update the next time I make this with adjusted amounts. I used a smoked (pre-cooked) ham steak for this; I have also made it with other kinds of ham, with turkey sausage, and without meat altogether with positive results. -- posted by Tlharin

Lazy Man's Simple Sweet Potato Casserole

My mom uses raw sweet potatoes and boils them. I just use the cans of sweet potatoes (yams on the can) to make mine... This recipe is so easy that even a caveman can do it! -- posted by Brad 007
