Raw Sweet Potato Casserole

Creamy, slightly sweet casserole topped with walnuts. Yes, it's made with raw sweet potato and the texture isn't exactly like your typical sweet potato casserole, but I love it! Tweaked the original recipe from Herbs for Health magazine, which called for dehydrating the nuts. Prep time does not include soaking the nuts overnight. -- posted by yogi

Spicy Sweet Potato Casserole

Tired of the same old sweet potatoes? Ready to skip another sugary, marshmallow side at your holiday table? So am I. :-) Found this while scanning magazines at a neighbors and quickly scribbled it down. The combination of dweet and savory additions look to enhance, not mask, the wonderful flavors of the under appreciated sweet potato. This will be gracing our holiday table next year and will likely make an appearance before then. Soon to be at a table at your house? Hope so. -- posted by justcallmetoni

Two of my favorite flavors, Sweet Potatoes and Maple. The cooking time for the sweet potatoes is shortened by parboiling them and it also helps to keep them moist.

Sweet Curry Chickpea Casserole

This is an adaptation of Dreena Burton's recipe from Vive le Vegan. It is fantastic, especially served over jasmine rice. You can either bake it or put it in the slow cooker. It keeps very well in the refrigerator--I think it tastes best a day or two after it is cooked. Alternatively, you can make Sweet Curry Chickpea Bisque by adding two cups of water and pureeing most of the mixture with a hand blender after cooking (adjust salt and spices to taste). -- posted by death_by_parsnip

Gingery Sweet Potatoes and Potato Casserole

This is a casserole of sweet, salty, gingery root vegetables. I invented it because I wanted a not-too-sweet sweet potato recipe to compliment some pork chops I was making. We had lots of ginger, an extra potato and some carrots lying around, so I added those in, too. The recipe is very loose, so play around with the ingredients however it suits you. Might be nice with some citrus, or perhaps with cayenne pepper, too. -- posted by Jeshica

Not so Sweet Sweet Potato Casserole

This recipe is very different from the typical sweet potato casseroles topped with marshmallows you might often see on the Thanksgiving table. First of all, no marshmallows or brown sugar anywhere in sight. In fact, the only sugar in this recipe comes naturally from the potatoes themselves and the juice. Topped with cheese and baked til warm and yummy :) A nice change of pace. -- posted by HeatherFeather

The Best Sweet Potato Casserole

This recipe is one of the simplest you'll find, and the yummiest for sure! (It's sweet enough to be a dessert.) I have not met one person who did not love this.
Candied Ginger Sweet Potatoes With Dried Cranberries

You may get confused when eating this yummy side. Yes! It is a side not a dessert. The flavor of this is so yummy. You have the sweetness from the potatoes, brown sugar, dried cranberries and juice. Yet tanginess from the cranberries & juice. And a nice bite and sweetness from the Ginger.
This is my Grandma Louise's recipe for a sweet potato casserole. I swear it is the best thing I have ever eaten. She makes it every Thanksgiving, Christmas, and Easter. If you are bringing this to a party, it can easily be reheated by covering it with aluminum foil, placing it in an oven at 350°F, and heating it for about 20-30 minutes or until just bubbling. Enjoy!
